Sauteed Zucchini Spears

Sauteed Zucchini Spears

3 medium zucchini (about 1 pound)
1 1/2 teaspoons olive oil
1/2 cup coarsely chopped onion
1/4 teaspoon salt
1/8 teaspoon black pepper


Cut zucchini in half lengthwise; cut each half crosswise into 2 pieces. Cut each zucchini piece into 3 spears.

Heat oil in a large nonstick skillet over medium high heat. Add zucchini and onion to pan; saute 5 minutes or until vegetables are lightly browned. Stir in salt and pepper. Yield: 4 servings
